We are spending the summer in Philadelphia while our house is being remodeled. It really is so nice being home with family and friends so close. Our kids especially love how much they are being spoiled by the grandparents. Our two oldest have been waking up and asking for popsicles for breakfast. Yes, POPSICLES. Full of SUGAR…at 8am. They know their Pop will (of course) say YES!! So…I wanted to make some fun and healthy popsicles that wouldn’t make me feel so bad when they are begging for them every morning.

Pineapple Whip

Have you ever been to DisneyWorld? You know those Pineapple Whip treats that are so close to the Pirates of the Caribbean ride? Well, this is my take on them. I’ve seen lots of different recipes for them using all different kinds of pineapple. To be honest, I think fresh, juicy pineapple or canned pineapple would be my first choice for these. I happened to be at Trader Joe’s a few weeks ago and picked up the frozen chunks which worked well, but I had to add a little agave nectar to sweeten them up. The frozen pineapple just didn’t seem to have much taste. Next time, when I use canned or fresh, I don’t think I will need the agave.

1 fresh, whole pineapple (or 1-28 oz can or ¾ bag of frozen)

½ cup of heavy cream (whipped)

agave/honey as needed

Pineapple 1

Blend the pineapple in a blender.

Beat the Heavy Cream until it’s the consistency of whipped cream.

Fold the cream into the pineapple and add sweetener to taste.

*You could easily make this popsicle dairy-free and sub coconut milk (just don’t try to whip it).

Fill popsicle molds, freeze, and enjoy!

Watermelon/Strawberry/Lime

1 cup cut watermelon

1 handful of strawberries (about 6)

Juice of 1 lime (you could use the zest as well if you want extra lime flavor)

Put everything in the blender and blend!

Add to popsicle molds, freeze, and enjoy!

Peanut Butter and Banana

This one is super easy and my parents loved it!

2 bananas

½ c peanut butter

1 tsp almond extract (could use vanilla extract as well)

Cut bananas into chunks, and add to blender with the peanut butter and almond extract.

Blend, freeze, and enjoy!

Veggie Pops

In a previous post, I shared how much my family and I love juicing. This recipe comes right from the Turtle Juice recipe.

2 stalks of celery (0r 1 cucumber would be even better!)

Handful of spinach

2 apples

1 cup pineapple

If you use a juicer, you can pour the juice right into the molds. If not, add all ingredients to the blender and then strain.

How beautiful is that green juice?!

It’s a great way to get kids to eat veggies!

Orange Creamsicle

This one was my kid’s favorite:

1 cup orange juice

1 cup heavy cream

1/2 tsp vanilla extract

1 Tbsp sugar (or agave or honey)

Combine all in the blender, fill molds, freeze, and enjoy!
