Easy Soups = Wintertime Win

There is nothing that makes me happier than a super easy dinner that yields plenty of leftovers. Because of that, today I’m sharing recipes for super easy soups that will warm your heart and belly. Let’s celebrate National Soup Month!

Taco Soup

This first soup is so easy that I’m just going to post a picture. No recipe needed. It is delicious. It could not be easier. It yields plenty of delicious leftovers.

You can substitute chicken for the ground beef.

Cook a pound of chicken in the crock pot. Pull apart, and throw in. Done!

Crock Pot Potato Soup

Ingredients:

One 30 oz bag of frozen diced hash browns

32 oz box of chicken broth

Can of cream of chicken soup

One package cream cheese

3 oz bacon bits

1 cup shredded cheddar cheese

Salt and pepper to taste

Directions:

Put the hash browns in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper to taste. Cook on low 7-8 hours or until potatoes are tender.

An hour before serving, cut the cream cheese into cubes and place in the crockpot. Mix a few times throughout the hour before serving. Once the cream cheese is completely mixed in, it’s ready to serve.

Top with cheddar cheese and some additional bacon bits!

Crock Pot Beef Stew

Ingredients:

2 (1 oz) packages of dry onion soup mix

1/2 teaspoon paprika

Two pounds lean beef stew meat (cut up into bite size pieces)

5 medium potatoes, peeled and diced

2 to 3 cups of baby carrots

1 small onion, chopped

2 (10 oz) cans cream of celery soup

1 cup ketchup

Directions:

  1. in a large Ziploc bag combine the dry onion soup mix and paprika. Add in meat and shake the bag to coat the meat with the seasonings (you may have to do this in 2 batches, for all the meat to fit). Once meat is coated, spread out evenly in greased 7 quart crock pot.
  2. Top meat evenly with diced potatoes, carrots and onion.
  3. Mix the cream of celery soup and ketchup in a small bowl and pour over the meat and vegetables.
  4. Cover crock pot and cook on low heat for 8 hours or until meat is cooked through and vegetables are tender. Stir to combine everything then serve
