What do you think of when you think of vegan food? Do you think of things like gumbo? Or tacos? Or pasta? These are just some of the things being cooked up by Nashville local, Kristie Rigdon Holden. If you’ve never tried it, chances are that you may not think there are many options available—much less delicious ones. But My Veggie Chef is trying to change that perception with their delicious and easy to cook meals. My Veggie Chef is a locally owned and operated company that delivers weekly vegan meals to the greater Nashville area (including Murfreesboro). Last week, my family and I were able to enjoy this company’s products firsthand. As a mom to a toddler and a newborn, you can imagine how helpful it was to have our week’s worth of meals prepared for us!

Kristie started My Veggie Chef in 2011 and has a passion for sharing her healthy, vegan recipes with as many families as possible. The concept is simple: place your order no later than noon on Wednesday of any given week, and on Sunday between 2pm-7pm, five frozen entrees will be delivered to your front door! Every meal is 100% vegan and is comprised of 4 servings. This meal size is recommended for singles, couples, and families with 1-2 children (with a cost of $80 a week). The food is in freezer bags that are recyclable and take up less room in a freezer than bulky plastic containers. The meals are meant to be defrosted in the refrigerator for 24 hours prior to cooking. When you’re ready to prepare dinner, the bags are pre-labeled with easy to follow instructions. Easy, foolproof cooking, and all the planning is done for you!

All of the prep work has been done in advance, so it never took me more than 30 minutes to have one of these meals ready. As the primary cook in our family, I’m used to following recipes and cooking instructions. For this reason, I had my husband make one of the meals to test the concept, and dinner was on the table in 20 minutes. David prepared the White Bean Quesadillas with Marinara sauce; it was definitely our personal favorite of the meals we enjoyed this week.

Kristie has many friends whose children enjoy her vegan meals as well. She reports that the Panko Crusted Tofu Strips with Maple Mustard Dipping Sauce is a huge kid favorite! Customers are not required to “subscribe” in any way but can order as often as they like. When I moved to Nashville when I was 11, I never knew how deep my roots would run here! I attended Belmont University (Go Bruins!) where I met my husband David. We were married in 2008, and 4 months later, he was off to Iraq for a year. A couple of years after he returned home, we had our first daughter, Madeline, who is a lively redhead that keeps us on our toes! Any and all rumors you've ever heard about the nature of redheads are in fact true. Our second little girl, Violet, was born in July of this year and is the sweetest little addition. Before having children, I worked as a pediatric nurse for 7 years, and last year worked at two Williamson County high schools as a Health Science teacher.
